Mashed Potato Pie

This Mashed Potato Pie with a meat crust is the perfect easy to make comfort food!  It is a great way for families to enjoy a meal together without a lot of fuss.

It is funny to think back on my thoughts on raising kids before I was a Mom.

I was sure that all three of my kids were going to be as much of a foodie as I am.

They would love to try new things.

And of course, embrace veggies the same way I do.

I mean, veggies rock, right?

When Alex, my oldest, was a toddler one of the first things he signed was “salad”.

At the time, I was in a phase where I ate a salad every morning for breakfast. Often, he would sit in my lap or cuddle next to me while I ate.

I was sure I was on the right track and offered him VERY tiny bite.

He instantly hated it and rewarded me by handing the bite back.

I’ve been fighting with him to get him to eat anything green ever since.

My salads would go on to be called “stinky salads,” and from that day forward he would run the other way any time I had one.

From the time Christian could crawl, he did the same. (Likely following big brother’s lead.)

Skye followed in her brothers’ footsteps and to this day, getting any of them to eat any vegetable other than potatoes is an uphill battle.

I try to coax them to try my green smoothie, but sadly they will have nothing to do with it.

So this mom has to get sneaky.

The truth is that if I can find a way to get the kids to eat their veggie without knowing it, I am all in.

It is self preservation folks.   Because a day without food battles is a good day.

Mashed Potato Pie

This Mashed Potato Pie with a meat crust is the perfect easy to make comfort food! It is a great way for families to enjoy a meal together without a lot of fuss.

Meat Crust

  • 1 pound ground beef
  • 2 teaspoons garlic powder
  • Salt & Pepper to taste
  • 1 egg beaten
  • 1/2 cup cheddar cheese


  • 2 cups vegetable broth
  • 1 package Idaho Spuds VeggieMash Broccoli & Cheddar
  • 2 eggs beaten
  • 3/4 cheddar cheese
  • 1 teaspoon minced garlic
  • Salt and Pepper to taste
  • 1/4 cup cheddar

For garnish: Chopped green onions, parsley


  1. Preheat oven to 350 degrees. Spray a 9-inch pie plate with oil.

Prepare the “crust.”

  1. Heat a skillet to medium heat. Add ground beef and garlic powder. Season with salt and pepper.

  2. Cook until the ground beef is browned. Drain.

  3. Transfer ground beef to a bowl and add egg and cheese. Stir until well combined.

  4. Transfer to the pie plate and use clean hands to mash down forming a “crust”.

Prepare VeggieMash.

  1. Bring 2 cups of vegetable broth to a bowl.

  2. Remove from heat and stir in pouch of VeggieMash. Use a fork to moisten all of the potatoes.

  3. Prepare Casserole

  4. Transfer prepared potatoes to a large bowl. Stir in beaten eggs, cheese and garlic.

  5. Spread the potato mixture on top of the meat and top with the remaining 1/4 cup of cheese.


  1. Bake for 20 minutes. Serve warm.

Recipe Notes

Variations for Beef and Mashed Potato Pie

  • Add onion, diced and sautéed to the ground beef mixture.
  • Swap out the cheddar cheese in the meat crust for Mozzarella. This will give the crust more “pull” power.
  • Add 2 tablespoons prepared horseradish and 1/4 cup fresh chopped chives to the potato mixture.
