My boyfriend and I used our Veggetti…(I know it sounds so dirty! ha-ha!)  But, we made an amazing recipe that I think you would really enjoy…I just Googled "cilantro lime chicken zucchini", and it was the first one on the list from ifoodreal.com.  So super simple, with very little ingredients, but AMAZING flavor!  Would love to know if you try it out. Enjoy if you do!  Love your videos. 😀 ♥

  4. I made this tonight Sunday and its early but we are eating this now and I used the Tri-colored quinoa and it is sooooo goood.
    you keep rockin this and share those meal /week preps-It inspires me to do this for my Mike and Myself!

  5. I love mexican food but this one is not for me. I've cut way back on cheese and I'm not sure that I see the reason for quinoa in this dish. I'd probably fiddle around with it and make the chicken and sauce without the cheese and serve it on roasted or steamed veggies…get more flavor too…. When I got sleeved, they removed my gall bladder  and I find that too much cheese, butter, etc….feels not so good …and since theres not much benefit to it….it does help me keep that stuff to more minimal amounts than I used to. I do love mexican food though…. On the other hand, I have been using a date and half a walnut as a treat lately…that was an awesome thing I picked up from you. I now put dates and nuts in a processor til it's a paste or doughtype ball…then make little balls…press a walnut or almond in them and roll in unsweetened grated coconut… perfect little sweet bite. With no added sugar than what is in the natural ingredients.
