I can’t believe 2017 is just about over!  What an amazing year this has been not only for me and my family, but for this little blog of mine as well 🙂  We officially moved into our home after waiting a long 9 months, new and lasting friendships were made and overall I was much healthier and happier this year!  That said, I definitely have some serious goals in 2018 that include upping my fitness regime and getting stronger, being more frugal while putting away more money in savings, taking more time for ME and of course, sharing more recipes each week with you all!

This recipe was by FAR the most popular recipe in 2017, and just so happens to be a personal favorite of mine!  It has been pinned more than 438,000 times (ahh!) and has appeared on Pinterest over 5 million times!  These meatballs are a total winner because they have SO much flavor, take less than 30 minutes to make and are perfect for weekly meal prep!  This recipe is definitely a MUST for 2018 🙂

This is another recipe that I love for my meal prep and it seems many of you do too!  This dish is not only healthy and full of flavor, but it literally takes about 20 minutes to throw together!

Detox Immune-Boosting Chicken Soup

I shared this recipe at the beginning of 2017 and it was definitely a hit all year long!  The flavor in this soup is incredible and is just the perfect pick-me-up during those dreaded cold and flu seasons.  Filled with tons of nutrients and antioxidants to boost immunity, this recipe makes a TON and can easily be made in just 30 minutes!  It also freezes well too so you can always have some on hand 🙂

This was definitely the year of salmon recipes and this dish was by FAR the most pinned!  Sheet pan meals are my absolute favorite because they are so simple to throw together during a busy week and everything is made all on ONE pan making clean up such a breeze!

As you can see sheet pan meals were super popular this year!  This Sheet Pan Sesame Chicken and Veggies is one of my favorites because it’s a much healthier version of “take-out” that has half the calories, but ALL the flavor!

This white chicken and quinoa chili was definitely the most popular slow cooker recipe on my site in 2017!  You can never go wrong when using your slow cooker and I love that you can just dump everything into your pot, turn it on and come back to a delicious, flavorful meal.  It doesn’t get much easier than this!

Cilantro Lime Chicken Tacos

I wasn’t surprised at ALL that these tacos were one of the most popular summer recipes of 2017!  I mean it doesn’t get much tastier than marinated chicken topped with tangy coleslaw and delicious avocado crema!

One Skillet Sun Dried Tomato Chicken and Gnocchi

Everyone needs a go-to comfort meal and this pillowy gnocchi with rotisserie chicken and creamy sun dried tomato sauce is simply delicious!  Easy to prepare and I promise even easier to eat 😉

This recipe is one of my favorite side dishes and is just so darn easy to make!  The seasoning is simply perfect and goes with everything.  Definitely add this to your meal plan in 2018!
