Cheesy Chicken Bacon Broccoli Casserole

Casseroles are one of my favourite foods to eat. There is something so comforting about them. Even in the hot summer months, I still like to have a good, hearty casserole sometimes.

What I love about this Cheesy Chicken Bacon Broccoli Casserole is that it’s a complete meal! No need to make a main protein dish along with another vegetable side dish. Just throw it all together and you’ve got dinner!

Many low carb casseroles use cauliflower as their base. While it’s a great option, when you have a hubby who really despises cauliflower, you have to get creative and use another vegetable!

(Here’s a favourite casserole of mine made with cauliflower!)

This casserole tastes great with broccoli. Even my kids like broccoli better when it’s covered in a sauce and some cheese 😉 Oh…and let’s not forget bacon!

To make this meal super quick, I like to use the leftovers from a whole cooked roasting chicken. Alternatively, you could buy a rotisserie chicken from the store, cut it up, and use that.

The leftovers from this meal freeze well and make great lunches. I hope you enjoy this casserole as much as we do!

Cheesy Chicken Bacon Broccoli Casserole

A low carb casserole that is a complete meal!


  • 1-1/2 lbs cooked chicken, shredded or diced
  • 4 cups of frozen broccoli, thawed and drained
  • 4 strips bacon, cooked and diced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 3 oz cream cheese, softened
  • 1 cup cheddar cheese, grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp fresh ground pepper
  • dash of chipotle seasoning (optional)


  1. Preheat oven to 350F. Spray a casserole dish with cooking spray and set aside.
  2. Combine mayonnaise, sour cream, cream cheese, and spices.
  3. Fold in chicken, broccoli, and 1/2 the bacon. Add to casserole dish.
  4. Sprinkle with cheese and remaining bacon.
  5. Bake for 30 – 40 minutes, until cheese is bubbly and browning.
