The biggest complaint my kids have made since we’ve switched to a low carb and grain free way of eating is that they don’t get to eat bread every day.

We used to go through bread like crazy in our house, at least 3 loaves a week! My husband still eats it, even though I wish he wouldn’t…baby steps with him!

The kids don’t eat much bread anymore. If they do, it’s when they are out for a special lunch or at a friend’s house. However, I wanted to make them a grilled cheese sandwich (their favourite) for lunch one day, so I looked up “low carb bread” and found a ton of coconut flour bread recipes.

I use coconut flour a lot in our house. I like that I don’t have to add any sugar to it because it’s naturally sweet. This time, I thought I would also add in some tapioca flour since I also have a bunch of it in the pantry.

I have a few “rules” when it comes to my recipes:

  1. It has to be easy to make. This mama ain’t got no time to be slaving away in the kitchen.
  2. It has to taste good. Because I want my kids to eat low carb too, I want them to enjoy the foods we eat.
  3. It has to be healthy. There are many “junk” low carb recipes out there, so I’m careful to choose ones that are healthier.

This bread recipe fit all three requirements!

When my boys sat down for lunch, they were pleasantly surprised that I had made them grilled cheese! I had half a loaf left over which I sliced and put in their school lunches the rest of the week. I even enjoyed a slice with my egg and veggie scramble breakfast! I just added some butter on top and it was delicious and filling. I bet it would be good smothered in almond butter too.

Please note that when you bake with coconut flour, it doesn’t rise like other bread. So if you’re expecting this big, fluffy loaf of bread, that’s not what you’re going to get. It’s a dense bread and a little smaller than regular bread.

  • 3/4 cup coconut flour
  • 1/2 cup tapioca flour
  • 1 tsp baking powder
  • 6 eggs
  • 1/2 cup butter, melted
  • 1 Tbsp apple cider vinegar


  1. Preheat oven to 350F. Spray a bread loaf pan with coconut oil and set aside.
  2. In a small bowl, combine coconut flour, tapioca flour, and baking powder. Stir to combine.
  3. In a large bowl, beat eggs until frothy. Beat in butter and vinegar.
  4. Add dry ingredients to wet ingredients and stir to combine.
  5. Pour batter into prepared bread pan and smooth the top with a spatula.
  6. Bake for 30 minutes. Remove from oven and cool for 10 minutes, then use a bread knife to release the edges of bread from the pan. Flip over to remove bread and let cool completely.
