Zucchini is a great low carb vegetable. Plus, it’s so versatile. We even make pizza crust out of it.
One of the vegetables we don’t eat much of since going low carb is potatoes. I still make them occasionally for the family, like these oven fries, but besides that, we prefer to eat a lot of other low carb veggies. However, I do sometimes miss having a loaded baked potato! The sour cream, cheese, and bacon…oh boy!
I thought, why not enjoy the same flavours of a loaded baked potato on zucchini!?
I must say, this Bacon and Cheese Hasselback Zucchini was awesome!! It has all the flavours of the loaded potato, but without all the starch and carbs.
Hasselback zucchini is so easy to make. I used some chopsticks to place my zucchini on before cutting it. That allows me to slice the zucchini without cutting through the entire thing.
Then just stuff your sliced cheese in the slits and bake!
Our whole family loved this zucchini recipe. Enjoy it with some grass-fed steak and you won’t even miss the potato!
