Flourless Chocolate Muffins

These delicious and chocolaty muffins are gluten free, dairy free, and refined sugar free!

Recently, I’ve done a complete overhaul of our pantry!

Part of the reason I’ve switched to a high fat, low carb way of eating is because of SUGAR!!

As you already know, packaged foods contain a TON of added sugar. Just check out the box of so called healthy Nutrigrain bars and you’ll see what I mean.

I was watching the movie, Fed Up, the other day, and I was floored by the amount of sugar that is in our foods. Back in the 70’s, the government thought it was a good idea to start taking fat out of food and making everything ‘low-fat.’ Can you guess what that fat was replaced with? Yep – SUGAR!!

Read the ingredients in any packaged food and you’ll find ingredients like:

Anhydrous dextrose, brown sugar, cane crystals, cane sugar, corn sweetener, corn syrup, corn syrup solids, crystal dextrose, evaporated cane juice, fructose sweetener, fruit juice concentrates, high-fructose corn syrup, honey, liquid fructose, malt syrup, maple syrup, molasses, pancake syrup, raw sugar, sugar, syrup and white sugar, fructose, lactose, maltose, carbitol, concentrated fruit juice, diglycerides, disaccharides, evaporated cane juice, erythritol, Florida crystals, fructooligosaccharides, galactose, glucitol, glucoamine, hexitol, inversol, isomalt, maltodextrin, malted barley, malts, mannitol, nectars, pentose, raisin syrup, ribose rice syrup, rice malt, rice syrup solids, sorbitol, sorghum, sucanat, sucanet, xylitol and zylose.

See how sneaky they can be?

I’m here to tell you that sugar is sugar, no matter what it’s called. Sure, there are “healthier sugars” but it still turns to glucose in our body.

So where was I??

Oh yes…I’ve done a complete overhaul of our pantry and have removed all packaged foods that I was buying. This includes granola bars for the kids, drinking boxes, packaged cookies, macaroni & cheese, pasta, rice mixes, etc. You should see our pantry now – it’s about half full!

Now, I’m not saying that we will be avoiding sugar completely, but I will no longer be buying those packaged snacks for the family.

After removing all that stuff, I wanted to find some recipes that I could prepare for the kids so they would still have snacks to eat at home or take to school. These Flourless Chocolate Muffins are one of them!

These were a big hit with the kids! And to be quite honest with you, they much prefer my homemade snacks to those packaged, tasteless, sugar-filled snacks!

What I love about these muffins is that they are so easy to make. Just throw everything in your blender or food processor and then divide into the muffin tin! Easy peasy lemon squeezy.

Using chickpeas instead of flour also gives them a boost of protein, which my growing boys need.

Flourless Chocolate Muffins

A chocolaty and fudgy muffin that is gluten, dairy, peanut, and refined sugar free.

Ingredients

  • 1 15-oz can no salt added chickpeas, drained and rinsed
  • 3 large eggs
  • 1/3 cup maple syrup
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 3 Tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • 3 Tbsp dark chocolate chips (use dairy free chocolate if you prefer)

Instructions

  1. Preheat oven to 350° F.
  2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
  3. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
  4. Divide batter among 12 prepared muffin cups.
  5. Top each muffin with about three chocolate chips; push into batter.
  6. Bake for 18-20 minutes, or until toothpick inserted in center comes out clean.
  7. Cool completely and enjoy!
